Our farmstead goat milk cheeses are made of milk from the Nubian and Saanen goats we’ve been raising at Elderslie Farm for many years.

"Fresh Goat. Caprino Fresco. Goat milk is springing and bright, very unlike cow milk. This simplest of styles portrays the milk in its quintessence: bright, zesty, tangy, and refreshing. When I see my goats climbing up and jumping off ledges, mounds, and feeder edges, I am always reminded that Caprine(Goat) is essentially the same word as Caper(Skip or dance in a lively way.)"

"Our Cloverdale was a happenstance challenge from my wife to make something less plebian and barnyardy, which most of my early bloomy rinds were, and to accomplish something more palatable, creamy, and with broader pairing options. The Brie style with Goat Milk offers so much.... Unencumbered by the heavy flavors of Cow Milk Brie, Cloverdale truly lives up to the image of our does: "lithe, refreshing, springy, vivacious, graceful, and lovely." 

Westfork

Nutty, creamy and aromatic. This style has hints of caramel and a background hint of dark woodsy flavor.

Food Pairing:
Cured meat, olives, sourdough bread, smoked salmon
Wine Pairing:
Sauvignon Blanc, white Bordeaux, light reds, brown ales, amber beer

   "Our Westfork Style is made with milk no more than 48 hours old, and it is made only during our grazing season, honoring the tradition of farmstead gouda where production was always centered on the temperate year when animals were on diverse forages which changed with each passing season. I love this cheese because it is like a chronicle or memory of the grazing year starting with cool season grasses, moving to chicory and forbes, moving into browse and Bermuda, and then finishing with Sun Hemp, Sunflowers, Crab Grass, and Sudan. Each wheel is a memory of those forages preserved."

Golden Ayr

"Golden Ayr is a 12-14 month Gouda. Made in simple farmhouse fashion it has strong nose, tart and zesty start, garlic, onion, and carmel. The small herd of Ayrshires which produce this milk are moving to pasture every day and are tended as an old world small holder would with minimal shelter or pampering, they are hardy outdoor cows who thrive under good husbandry despite our difficult climate."
